Ingredients

  • 2 cups Greek yogurt whole-milk, for the creamiest result
  • 2-3 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup fresh berries blueberries, raspberries, sliced strawberries
  • 1/4 cup granola, chopped nuts, or mini chocolate chips

Instructions

  • Line a baking sheet with parchment paper, letting it come up the sides so you can lift the bark out later.
  • In a bowl, stir together the yogurt, honey, and vanilla until smooth and evenly sweet.
  • Pour the yogurt onto the parchment and spread it into an even layer about 1/4-inch thick.
  • Scatter the berries and crunchy topping evenly over the surface, pressing them in gently.
  • Freeze flat for at least 3 hours, or until completely solid.
  • Lift the frozen slab off the parchment and break it into shards. Serve right away and keep the rest frozen.

Notes

Use thick Greek yogurt for a creamy (not icy) freeze, and don't skip the honey. Store shards in an airtight container in the freezer for up to 3 weeks.
