Beef Tacos

Ingredients

  • 1 lb ground beef (80/20)
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup water
  • 8 small flour or corn tortillas

Instructions

  • Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned. Drain excess fat.
  • Add the diced onion and cook for 2–3 minutes until softened. Add the garlic and cook for 1 more minute.
  • Add all the spices and stir to coat the beef evenly.
  • Pour in the water and stir. Simmer for 2–3 minutes until the liquid is absorbed and the beef is well coated in the seasoning.
  • Warm the tortillas in a dry skillet or directly over a gas flame for 20–30 seconds per side.
  • Spoon the beef into the tortillas and top with your preferred toppings. Serve with lime wedges.

Notes

Drain the fat after browning so the beef isn't greasy in the taco. Warming the tortillas makes a huge difference — a cold tortilla breaks and tastes flat. Taco meat reheats beautifully, so make a double batch for taco salads, burritos, or nachos. Toppings: shredded cheddar, lettuce, diced tomato, sour cream, salsa, guacamole, lime, and cilantro.
