Classic Beef Burgers

Ingredients

  • 1.5 lb ground beef (80/20 blend)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 4 burger buns, toasted
  • 4 slices cheddar or American cheese
  • 1 tbsp butter or oil, for cooking

Instructions

  • Divide the ground beef into 4 equal portions. Gently shape into patties about 3/4 inch thick. Press a small indent in the center of each patty with your thumb — this keeps them from puffing up.
  • Season both sides generously with salt, pepper, and garlic powder.
  • Heat a cast iron skillet or grill pan over high heat until very hot. Add the butter or oil.
  • Cook the patties for 3–4 minutes without moving them. Flip once and cook another 3–4 minutes for medium doneness. Do not press down on the patties.
  • Add the cheese in the last minute of cooking and cover loosely to melt.
  • Rest the patties for 2 minutes, then assemble on toasted buns with your preferred toppings.

Notes

An 80/20 blend has the fat content that keeps burgers juicy. Handle the beef as little as possible — overworking makes dense, tough patties. A screaming-hot pan gives that crust, and don't press down or you squeeze out the juices. Internal temps: 160°F well done, 145°F medium, 135°F medium-rare. Toppings: lettuce, tomato, onion, pickles, ketchup, mustard, mayo.
