Miso Salmon Bowl

Ingredients

  • 2 salmon fillets (6 oz each)
  • 2 tbsp miso paste
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 cup cooked white rice
  • 1 green onion, sliced
  • Sesame seeds optional
  • For serving: kimchi, toasted nori, steamed or fresh vegetables

Instructions

  • Preheat oven to 400°F (200°C).
  • Whisk together the miso paste, soy sauce, honey, and sesame oil. Brush over the salmon fillets.
  • Bake the salmon for 12–15 minutes, until cooked through and slightly caramelized.
  • Divide the rice between bowls. Top with the salmon, green onion, and your desired toppings. Sprinkle with sesame seeds and serve.

Notes

Keep the salmon and rice separate in airtight containers for up to 2 days for easy meal prep. Cook the rice and prep the veggies ahead for a 10-minute assembly. The salmon can also be pan-seared for 4–5 minutes per side instead of baking.
