Ingredients

  • 4 thick slices brioche or challah bread about 1 inch thick
  • 3 large eggs
  • 1/2 cup whole milk
  • 2 tbsp heavy cream
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 2 tbsp unsalted butter, for cooking
  • Maple syrup, powdered sugar, fresh berries, or whipped cream, to serve

Instructions

  • In a shallow bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla, and cinnamon until well combined.
  • Heat a large skillet or griddle over medium-low heat. Add 1 tbsp butter and let it melt.
  • Dip each slice of bread into the egg mixture, letting it soak about 20–30 seconds per side. The bread should be saturated but not falling apart.
  • Place the soaked bread in the skillet and cook 3–4 minutes per side, until deep golden brown.
  • Add the remaining butter as needed between batches.
  • Serve immediately with maple syrup, powdered sugar, fresh berries, or whipped cream.

Notes

Slightly stale, day-old bread absorbs the custard best without going soggy. Cook low and slow so the inside sets before the outside burns. Keep finished slices warm on a baking sheet in a 200°F oven while you cook the rest.
